Let’s make coffee.

  1. 01

    Set up your filter

Place the three-layer side over the spout to keep the air channel open. Rinse the paper if you like, and discard the rinse water.

  2. 02

    Add the coffee

Grind 40 g medium-coarse and add it to the filter. Set the brewer on your scale and tare it.

  3. 03

    Start with a bloom

Add 100 g of water, evenly wetting the coffee. Give it about 45 seconds before continuing.

  4. 04

    Pour in stages

Pour steadily to 320 g, then continue to a total of 640 g as the water level drops. Keep water below the rim of the filter.

  5. 05

    Taste and share

Let the water drain, remove the filter, and gently swirl the carafe. Around 4–5 minutes is a starting target, not a requirement for a good cup.

Four cups, but which cups?

“Cup” is a slippery measure. This recipe uses 640 g of brewing water; some stays in the grounds. Expect four small servings, not four large mugs. Use the ratio calculator to scale for your usual cups, while staying within your brewer’s capacity.
